Water (as needed)

1 tsp oil (optional)
For the Stuffing:
-
1 large white radish (mooli), grated
-
1 green chili, finely chopped
-
1-inch ginger, grated
-
1 tbsp fresh coriander leaves, chopped
-
1/2 tsp red chili powder
-
1/2 tsp ajwain (carom seeds)

Salt to taste
🍳 Instructions:
Step 1: Prepare the Dough
-
In a mixing bowl, add wheat flour and salt.
-
Gradually add water and knead into a smooth dough.
-
Cover with a damp cloth and rest for 15–20 minutes.
Step 2: Prepare the Stuffing
-
Grate the radish and squeeze out excess water (very important to avoid soggy parathas).

Set aside. You can keep the squeezed radish water to add to the dough for extra flavor.
Step 3: Assemble the Parathas
-
Divide the dough into equal portions and roll into small balls.
-
Roll out one ball into a 4–5 inch disc, place a spoonful of stuffing in the center.
-
Bring the edges together and seal well.
-
Gently roll out the stuffed dough again into a 6–7 inch round paratha.
Step 4: Cook
-
Heat a tawa or skillet over medium heat.
-
Place the rolled paratha and cook for 1–2 minutes on each side.
-
Apply ghee or oil and cook until both sides are golden brown and crisp.
