Atta Halwa (Whole Wheat Flour Halwa)

Ingredients:

  • 1 cup atta (whole wheat flour)

  • 1 cup ghee (clarified butter)

  • 1 cup sugar

  • 3 cups water

  • 1/4 cup chopped nuts (e.g., almonds, cashews, pistachios)

  • 1/4 teaspoon cardamom powder

Instructions:

  1. Prepare the Sugar Syrup:

    • In a saucepan, combine the sugar and water. Bring it to a boil, stirring until the sugar is completely dissolved. Once the sugar syrup is ready, keep it aside.

  2. Roast the Atta:

    • Heat the ghee in a heavy-bottomed pan or kadai over medium heat.

    • Add the atta to the melted ghee and stir continuously to roast it. Make sure to stir constantly to prevent the atta from burning.

    • Continue roasting until the atta turns golden brown and releases a nutty aroma. This should take around 7-10 minutes.

  3. Add the Sugar Syrup:

    • Carefully pour the prepared sugar syrup into the roasted atta mixture while stirring continuously. Be cautious as the mixture may splatter.

    • Keep stirring until the halwa thickens and starts to leave the sides of the pan.

  4. Finish with Cardamom and Nuts:

    • Add the cardamom powder and chopped nuts to the halwa. Mix well to combine.

    • Cook for another 2-3 minutes, allowing the flavors to meld together.

  5. Serve:

    • Serve the atta halwa hot, garnished with additional nuts if desired. Enjoy this warm and comforting dessert!
